Meaning star fruit in Spanish, this lot is the result of a careful dual fermentation process, finished with a thermal shock wash to heighten clarity and complexity. bright, juicy, and layered with a buttery body. Balanced yet adventurous, it’s a coffee that bridges the gap between natural and washed profiles, offering the best of both worlds.

Small Batch Coffee, Roasted Light with Precision

We embrace a Nordic-style approach to roasting—light, clean, and focused on clarity. Our single origin coffees are roasted in small batches on Giesen W6 and W15 machines, carefully profiled to highlight origin character and sweetness.

Whether brewed as filter or espresso, each roast is designed for balance, transparency, and versatility in the cup.

Recipe

Espresso: We recommend using 20g of beans (dose) to get 40 - 45g of espresso out (yield), during 24-28 seconds.

Filter: To brew in infusion/fed brewers (V60, Clever) use a ratio of 1:15 ratio of beans:water.
